- 1 1/2 c. creamed corn
- 1 c. yellow corn meal
- 1 c. butter, melted
- 3/4 c. buttermilk
- 2 onions, chopped
- 2 eggs, beaten
- 1/2 tsp. baking soda
- 1 1/2 c. grated Cheddar
- 3 jalapeno peppers, diced
Directions

1Preheat oven to 350°.

2Grease a 9-inch square baking pan. Combine first 7 ingredients in a large bowl and mix well.

3Pour half of this batter into pan. Cover evenly with half the cheese, then peppers, then remaining cheese. Top with remaining batter. Bake 1 hour.

4Let cool 15 minutes.

5Cut into squares.
