  • 1 1/2 c. yellow cornmeal
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 2 eggs
  • 2/3 c. vegetable oil
  • 1 c. buttermilk
  • 1 small can chopped jalapeno peppers
  • 1 (No. 3) can cream-style corn
  • 1 c. grated Cheddar cheese

Directions

    Mix all ingredients together in order listed, except cheese. Pour half the batter into a greased, 9 x 12-inch baking dish and sprinkle with 1/2 the cheese.

    Add remaining batter and cover with cheese.

    Bake at 350° until done, about 45 minutes.
