- 1 1/2 c. cornmeal
- 1 Tbsp. flour
- 3 tsp. salt
- 1/2 tsp. baking soda
- 2/3 c. salad oil
- 1 c. buttermilk
- 2 eggs, well beaten
- 1 large can cream-style corn
- 3 to 6 jalapeno peppers
- 1/2 green pepper, chopped
- 1 large onion, chopped or 4 to 5 green onions
- 1 1/2 c. grated Cheddar cheese
Directions

1Mix cornmeal, flour, salt and soda; add buttermilk, oil, eggs and corn.

2Beat and mix well.

3Stir in jalapenos and onions. Grease 9 x 13-inch baking dish.

4Heat well, pour in half of batter; sprinkle with half of cheese, repeat.

5Bake at 350° for 50 to 55 minutes or untildone.
