  • 1 1/2 c. cornmeal
  • 1 Tbsp. flour
  • 3 tsp. salt
  • 1/2 tsp. baking soda
  • 2/3 c. salad oil
  • 1 c. buttermilk
  • 2 eggs, well beaten
  • 1 large can cream-style corn
  • 3 to 6 jalapeno peppers
  • 1/2 green pepper, chopped
  • 1 large onion, chopped or 4 to 5 green onions
  • 1 1/2 c. grated Cheddar cheese

Directions

    Mix cornmeal, flour, salt and soda; add buttermilk, oil, eggs and corn.

    Beat and mix well.

    Stir in jalapenos and onions. Grease 9 x 13-inch baking dish.

    Heat well, pour in half of batter; sprinkle with half of cheese, repeat.

    Bake at 350° for 50 to 55 minutes or untildone.
