- 1 c. corn meal
- 2 tsp. baking powder
- 1/4 tsp. salt
- 2 large eggs
- 3 Tbsp. nonfat sour cream
- 1 (8 oz.) can cream-style corn
- 1 (4 oz.) jar pickled jalapeno peppers, chopped and drained
- 1 1/2 tsp. vegetable oil
Directions

1Heat 8-inch iron skillet in 400° oven.

2Combine first 3 ingredients in a large bowl.

3Make a well in the center of mixture.

4Combine eggs and next 4 ingredients.

5Add to dry ingredients, stirring until moistened.

6Remove skillet from oven. Spray with cooking spray.

7Pour batter into hot skillet and bake at 400° for 20 minutes.
