  • 3 c. cooked rice
  • 2 c. sour cream
  • 1 small can diced green chilies
  • 1 medium jalapeno pepper, diced
  • salt to taste
  • 3/4 lb. Monterey Jack cheese, sliced
  • 1/4 c. Cheddar cheese, shredded

Directions

    Remove seeds from peppers.

    Combine rice, sour cream, green chilies and jalapeno.

    Add salt.

    Place layer of rice in lightly greased casserole dish.

    Top with layer of Monterey cheese. Continue layering until all rice and Monterey cheese have been used.

    Top with Cheddar cheese.

    Bake at 350° for 30 minutes. Serves 6 to 8.
