- 3 c. cooked rice
- 2 c. sour cream
- 1 small can diced green chilies
- 1 medium jalapeno pepper, diced
- salt to taste
- 3/4 lb. Monterey Jack cheese, sliced
- 1/4 c. Cheddar cheese, shredded
Directions

1Remove seeds from peppers.

2Combine rice, sour cream, green chilies and jalapeno.

3Add salt.

4Place layer of rice in lightly greased casserole dish.

5Top with layer of Monterey cheese. Continue layering until all rice and Monterey cheese have been used.

6Top with Cheddar cheese.

7Bake at 350° for 30 minutes. Serves 6 to 8.
