  • 16 to 18 lb. turkey
  • salt and pepper
  • poultry seasoning
  • Season-All
  • cayenne pepper
  • celery
  • onions
  • bell peppers
  • 6 to 8 jalapeno peppers
  • 1 lb. hot Italian sausage
  • 1 large bottle Italian salad dressing
  • 1 can beer
  • 12 oz. white wine
  • 1 c. vinegar

Directions

    Season turkey well with salt, pepper, poultry seasoning, Season-All and cayenne pepper.

    Stuff turkey with celery, onions, bell peppers, jalapeno peppers and sausage.

    Place in foil lined heavy roaster and pour on turkey salad dressing, beer, white wine and vinegar.

    Cover with foil and cook on grill with full bag of charcoal 4 to 6 hours or in 400° oven.

    Baste every 30 to 40 minutes.
