- 125 g butter, softened
- 34 cup sugar
- 2 eggs
- 13 cup plum jam
- 13 cup buttermilk
- 1 14 cups self raising flour
- 14 teaspoon salt
- 2 teaspoons mixed spice
- 12 cup chopped pecans (optional)
- icing sugar, to dust
Directions

1Preheat oven to 180 Degrees Celsius.

2Grease 19x9cm loaf pan.

3Beat butter and sugar until creamy.

4Beat in eggs one at a time until fluffy.

5Combine jam and buttermilk.

6Sift together flour and mixed spice with salt.

7Using wooden spoon add flour mixture alternatively with the liquid to butter mixture, beating until combined after each addition.

8Spoon batter into prepared tin.

9Bake 50 minutes.
