Jamaican Coconut Bread

- 4 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 c. grated coconut
- 3/4 c. sugar
- 1 tsp. vanilla
- 1 egg, beaten
- 1 c. milk
- sugar (for dusting)
Directions

1Sift together flour, baking powder and salt.

2Add coconut, sugar, vanilla and beaten egg, beating the mixture well after each addition.

3Pour in milk, a little at a time, until dough is firm but not sticky.

4(Add a little more flour if it should become so.) Knead the dough

5for a few minutes.

6Shape into loaves to fit your greased loaf pans to about 3/4 full. Dust tops with fine sugar.

7Bake at 350° for about 1 hour.
