  • 1 cup margarine
  • 1 cup sugar
  • 4 eggs
  • 1 pound raisins
  • 1 pound currants
  • 1/2 pound cherries
  • 1/2 pound prunes chopped
  • 1 teaspoon cinnamon
  • 1/2 teaspoon mixed spice
  • 1/2 teaspoon salt
  • 3 cups wine
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 teaspoon almond

    Soak fruits in wine overnight

    Cream butter and sugar until soft and fluffy

    Add eggs one at a time to butter and sugar mixture, beating well after each addition

    Sieve dry ingredients into butter and cream mixture, alternatively with wine and fruits

    Add vanilla, almond, cinnamon, and mixed spice to this mixture

    Pour mixture in greased and line baking tin

    Bake at 300°F for 1 1/2 hours then at 275°F for another 1 1/4 hours.
