- 2 c. water
- 1 1/4 c. chopped red and green bell pepper
- 3/4 c. diced Virginia ham
- 8 oz. box yellow rice mix
- 8 oz. peeled, deveined medium-size shrimp
- 10 oz. box frozen cut okra
Directions

1Bring water, peppers and ham to a boil in a large nonstick skillet.

2Stir in yellow rice mix.

3Cover and cook over low heat for 15 minutes.

4Stir in peeled, deveined medium-size shrimp and box of frozen cut okra.

5Cover and cook 7 minutes, stirring a few times, or until shrimp are pink and opaque in center and rice is tender.

6Serves 4.
