- 2 Tbsp. butter
- 1/2 c. diced onion
- 1/4 c. diced green pepper
- 1 lb. ground beef
- 1 (16 oz.) can stewed tomatoes
- 1 small bay leaf
- 1 tsp. salt
- 1/2 tsp. sugar
- 1/4 tsp. thyme
- 2 c. cooked rice
Directions

1Melt butter in skillet on medium heat.

2Add onion, pepper and beef.

3Cook until meat is brown.

4Drain off excess fat.

5Drain tomatoes, measuring juice.

6Add water to juice to make 2 cups.

7Add juice, tomatoes, sugar, salt, thyme and bay leaf.

8Cover and simmer 5 minutes, then add rice.

9Simmer 5 more minutes.

10Discard bay leaf.

11Serves 4.
