- 1 lb. ham
- 1 c. chopped green pepper
- 1 c. chopped onion
- 1 clove garlic, minced
- 1/4 tsp. cayenne pepper
- 2 Tbsp. chopped parsley
- 2 Tbsp. Worcestershire
- 1 (28 oz.) can whole tomatoes
- 1 Tbsp. shortening
- 2 tsp. salt
- 1/2 tsp. thyme
- 1 Tbsp. flour
- 2 1/2 c. water
- 2 c. rice
- 1 lb. shrimp
Directions

1In large skillet, cook ham 5 minutes.

2Drain off all but 2 tablespoons fat.

3Add pepper, onion and garlic.

4Cook until tender.

5Blend in flour and brown slowly stirring often.

6Stir in tomatoes, water and parsley.

7Bring to a boil and add rice, Worcestershire, salt, thyme and pepper.

8Return to boil.

9Reduce and simmer covered 20 minutes.

10Add shrimp and cook 10 minutes longer.
