- 1/2 lb. bacon
- 1/2 c. finely chopped onion
- 2 green peppers, chopped
- 1 c. uncooked rice
- 1 clove garlic, minced
- 1 can stewed tomatoes
- 1 tsp. salt
- 1 bay leaf
- 1/4 tsp. thyme
- 2 Tbsp. chopped parsley
- 1/2 tsp. pepper
- 1/2 lb. ham, cubed
- 1/2 tsp. Tabasco sauce
- 2 c. chicken broth
- 1 lb. shrimp, cooked, shelled and deveined
Directions

1Cut bacon into 1/2-inch pieces and cook in heavy, oven-proof pan with cover.

2When browned, remove and drain on paper towels. Saute onion and green pepper and cook for one minute.

3Add rice and cook for 3 minutes.

4Add all remaining ingredients and bring to a boil.

5Cover pot and place in oven.

6Bake covered at 350° for 15 to 20 minutes or until liquid is absorbed and rice is tender.
