- 2 T EVOO
- 2 chicken breasts-baked in over at 425 degrees for 35 min.
- 1/4 lb ham-cubed
- 1 lb bulk sausage (hot)
- 1 medium red onion-cut into wedges
- 2 celery stalks-finely diced
- 3 garlic cloves-minced
- 1 C converted rice
- 1 28 oz can diced tomatoes
- 1 C chicken broth
- 1 red pepper-diced
- 2-3 t cajun seasoning
- 2 bay leaves
- 1 lb large shrimp
- 1/4 C chopped flat leaf parsley
Directions

1Heat oven to 350 degrees. In dutch oven, heat EVOO, cook sausage. Revove; cook onions, celery, garlic, and peppers for 5 minutes. Add tomatoes, broth and rice and seasoning. Cook 5 minutes. Add bay leaves and chicken, ham and sausage. Cover and bake 35 minutes. Add shrimp, bake 10 minutes. Sprinkle with parsley; serve.
