  • 1 lb. polish sausage or kielbasa
  • 2 c. ham
  • 2 Tbsp. butter
  • 2 c. chicken
  • 2 Tbsp. brown sugar
  • 1 c. celery
  • 1 bell pepper, chopped
  • 1 c. onion, chopped
  • 1/2 tsp. red pepper
  • 1 tsp. black pepper
  • 1 tsp. salt
  • 2 bay leaves
  • 1/2 tsp. thyme
  • 1/2 tsp. sage
  • 2 c. tomatoes
  • 2 cloves garlic, minced
  • 2 1/2 c. chicken stock
  • 1 1/2 c. rice

    Saute sausage and ham in butter for 5 minutes. Add chicken and brown sugar; cook 5 more minutes.

    Add celery, bell pepper, onion; cook 5 minutes more.

    Add all spices and saute 1 minute. Mix in tomatoes and garlic.

    Cook for an additional minute or two. Combine everything with chicken stock and rice in a Dutch oven. Cook at 350° for 1 hour or until all liquid has been absorbed.
