  • 3 Tbsp. olive oil
  • 1/4 lb. smoked ham, chopped
  • 2 ribs celery, finely chopped
  • 1 large onion, finely chopped
  • 1 green pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 lb. smoked mild or hot sausage, sliced
  • 1 (28 oz.) can whole tomatoes with juice, chopped
  • 1 tsp. thyme and 1 tsp. red pepper sauce (or to taste)
  • 2 c. rice
  • 3 c. hot chicken broth
  • salt and pepper
  • 1/2 lb. sea scallops
  • 1/2 lb. medium shrimp, shelled and deveined

    In a large saucepan, heat the oil over medium heat.

    Add the ham, celery, onion, pepper and garlic.

    Cook, stirring occasionally, until the vegetables are tender, about 15 minutes.
