- 1/4 lb. smoked ham, chopped
- 2 ribs celery, finely chopped
- 1 large onion, finely chopped
- 1 green pepper, finely chopped
- 2 cloves garlic, minced
- 1 lb. smoked mild or hot sausage, sliced
- 1 (28 oz.) can whole tomatoes with juice, chopped
- 1 tsp. thyme and 1 tsp. red pepper sauce (or to taste)
- 2 c. rice
- 3 c. hot chicken broth
- salt and pepper
- 1/2 lb. sea scallops
- 1/2 lb. medium shrimp, shelled and deveined
