- 1 c. diced onion
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 5 stalks celery, diced
- 1/4 stick oleo
- 3 Tbsp. olive oil
- 1 (8 oz.) can whole tomatoes
- 1 (8 oz. ) can stewed tomatoes
- 1 (8 oz.) can whole kernel corn
- 1 (8 oz.) can okra, sliced
- 2 c. ham diced or 2 c. chicken, diced
- 1 lb. shrimp, cleaned
- 6 c. cooked rice (more if needed)
Directions

1In large frying pan (with lid), saute onion, green and red pepper and diced celery in hot olive oil/oleo mixture, until soft. Add tomatoes, corn, okra, diced ham and/or chicken.

2Simmer 20 minutes.

3add shrimp; simmer 7 minutes.

4Test shrimp for doneness.
