Ingredients

  • 1 c. diced onion
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 5 stalks celery, diced
  • 1/4 stick oleo
  • 3 Tbsp. olive oil
  • 1 (8 oz.) can whole tomatoes
  • 1 (8 oz. ) can stewed tomatoes
  • 1 (8 oz.) can whole kernel corn
  • 1 (8 oz.) can okra, sliced
  • 2 c. ham diced or 2 c. chicken, diced
  • 1 lb. shrimp, cleaned
  • 6 c. cooked rice (more if needed)

Directions

    In large frying pan (with lid), saute onion, green and red pepper and diced celery in hot olive oil/oleo mixture, until soft. Add tomatoes, corn, okra, diced ham and/or chicken.

    Simmer 20 minutes.

    add shrimp; simmer 7 minutes.

    Test shrimp for doneness.
