  • 3 chicken breasts
  • 1 link smoked sausage
  • 1 1/2 c. white rice (not Minute rice)
  • 3 c. broth from chicken
  • 1 large onion, chopped
  • 2 stalks celery with leaves, chopped
  • 1/2 bell pepper, diced
  • 2 cloves garlic and 1/4 tsp. garlic powder
  • 1/4 tsp. black pepper
  • 1 tsp. salt
  • 1/4 tsp. cayenne pepper

    Boil chicken in 3 to 4 cups water with some chopped onion and celery added.

    Save broth.

    Debone chicken.

    In large skillet, brown sausage.

    Add chopped vegetables and rice in sausage and drippings.

    Add 3 cups chicken broth.

    Add spices.

    Cover and simmer until rice is done (about 40 minutes).

    Add chicken midway. Serves 6.
