- 3 chicken breasts
- 1 link smoked sausage
- 1 1/2 c. white rice (not Minute rice)
- 3 c. broth from chicken
- 1 large onion, chopped
- 2 stalks celery with leaves, chopped
- 1/2 bell pepper, diced
- 2 cloves garlic and 1/4 tsp. garlic powder
- 1/4 tsp. black pepper
- 1 tsp. salt
- 1/4 tsp. cayenne pepper
Directions

1Boil chicken in 3 to 4 cups water with some chopped onion and celery added.

2Save broth.

3Debone chicken.

4In large skillet, brown sausage.

5Add chopped vegetables and rice in sausage and drippings.

6Add 3 cups chicken broth.

7Add spices.

8Cover and simmer until rice is done (about 40 minutes).

9Add chicken midway. Serves 6.
