- 2 lb. sausage, chicken, shrimp (in any combination)
- 1 medium onion
- 1/2 bell pepper
- 2 cloves garlic, minced
- 1 tsp. salt
- 3 oz. tomato paste
- 1 bay leaf
- 1 1/2 c. rice
- 1/2 tsp. cayenne pepper
Directions

1In a large pot, saute chopped sausage and chicken in a little oil or butter until done. Chop vegetables and add.

2Cook until soft.

3Add spices and 3 cups of water, turn up the heat and bring to a boil.

4Add tomato paste and rice.

5Stir well.

6Add peeled shrimp.

7Cover the pot and turn the heat down to low. Cook for 20 to 30 minutes or until rice is done.

8Converted rice is especially good in this recipe.

9Serves 6.
