- 1 Tbsp. peanut oil
- 1 onion, diced
- 4 ribs celery, diced
- 2 green peppers, diced
- 3 cloves garlic, diced
- 28 oz. can tomatoes
- 3 1/2 c. chicken broth
- 1/2 lb. sausage (smoky flavor prebrowned)
- 1 c. cooked ham, diced
- 2 Tbsp. parsley
- 2 tsp. Tabasco
- 1/4 c. Worcestershire sauce
- 3 tsp. thyme
- 2 c. converted rice
Directions

1Saute onion, celery, pepper and garlic in peanut oil.

2Add canned tomatoes and chicken broth.

3Simmer for 1 hour.

4Add sausage, ham, parsley, Tabasco, Worcestershire and thyme; simmer 20 minutes more.

5Add rice; cook 25 minutes more.

6Best in a big kettle.
