Ingredients

  • 250 grams butter
  • 140 grams icing sugar
  • 1 tsp vanilla essence
  • 375 grams flour
  • 1 egg yolk
  • 1 jam of choice, I prefer rasberry

Directions

    Whisk softened butter and icing sugar till fluffy.

    Add in vanilla essence and egg yolk.
  3. 3
    Sift in flour gradually mixing into a firm dough.
  4. 4
    Roll out into 4 mm sheets and using a cutter or glass, cut out round buscuit size discs (bases).
  5. 5
    Take half of the buscuits and cut a further hole in the middle (tops).
  6. 6
    Place on greaseproof baking tray and bake at 170F for approx 10 mins or untill golden.

    Remove from oven and leave to cool.
  8. 8
    When cooled, spread the whole buscuit bases with the jam, and place the buscuit tops with the holes on top to form a sandwich.
