- 250 grams butter
- 140 grams icing sugar
- 1 tsp vanilla essence
- 375 grams flour
- 1 egg yolk
- 1 jam of choice, I prefer rasberry
Directions

1Whisk softened butter and icing sugar till fluffy.

2Add in vanilla essence and egg yolk.

3Sift in flour gradually mixing into a firm dough.

4Roll out into 4 mm sheets and using a cutter or glass, cut out round buscuit size discs (bases).

5Take half of the buscuits and cut a further hole in the middle (tops).

6Place on greaseproof baking tray and bake at 170F for approx 10 mins or untill golden.

7Remove from oven and leave to cool.

8When cooled, spread the whole buscuit bases with the jam, and place the buscuit tops with the holes on top to form a sandwich.
