Ingredients

  • 2-1/2-lbs yellow squash
  • 2 eggs, lightly beaten
  • 1/2 c milk
  • 6 Tbs margarine (3/4 stick)
  • 2 c sharp cheese (grated)
  • 1 lg. onion, chopped
  • 4 slices toast, crumbled

Directions

    Cook onions and squash until tender.

    Drain well.

    While still hot, add breadcrumbs, eggs, milk, and 1-1/2 c of cheese. Mix well.

    Add salt and pepper to taste.

    Melt butter in large casserole dish.

    Pour in squash mixture.

    Bake at 375 for 45 minutes.

    Remove from oven and sprinkle with remaining cheese. Return to oven and heat until cheese melts.

    Serves 6-8.
