  • 3 eggs
  • 1 c. sugar
  • 1/3 c. water
  • 1 tsp. vanilla
  • 3/4 c. self-rising flour
  • 2/3 c. jelly or jam
  • confectioners sugar

Directions

    Heat oven to 375°.

    Line jelly roll pan with foil or wax paper; grease.

    Beat eggs about 5 minutes until very thick and lemon colored.

    Gradually beat in granulated sugar.

    On low speed, blend in water and vanilla.

    Gradually add flour, beating just until batter is smooth.

    Pour into pan.

    Bake 12 to 15 minutes. Loosen cake from edges of pan.

    Invert on towel sprinkled with confectioners sugar.

    Carefully remove paper or foil. Trim off stiff edges if necessary.

    While hot, roll cake and towel from narrow end.

    Cool on wire rack.

    Unroll cake; remove towel.

    Beat jelly slightly with fork to soften.

    Spread over cake.

    Roll up. Sprinkle with confectioners sugar.
