- 3 eggs
- 1 c. sugar
- 1/3 c. water
- 1 tsp. vanilla
- 3/4 c. self-rising flour
- 2/3 c. jelly or jam
- confectioners sugar
Directions

1Heat oven to 375°.

2Line jelly roll pan with foil or wax paper; grease.

3Beat eggs about 5 minutes until very thick and lemon colored.

4Gradually beat in granulated sugar.

5On low speed, blend in water and vanilla.

6Gradually add flour, beating just until batter is smooth.

7Pour into pan.

8Bake 12 to 15 minutes. Loosen cake from edges of pan.

9Invert on towel sprinkled with confectioners sugar.

10Carefully remove paper or foil. Trim off stiff edges if necessary.

11While hot, roll cake and towel from narrow end.

12Cool on wire rack.

13Unroll cake; remove towel.

14Beat jelly slightly with fork to soften.

15Spread over cake.

16Roll up. Sprinkle with confectioners sugar.
