Ingredients

  • 1 c. sugar
  • 3 whole eggs
  • 1 c. all-purpose flour
  • 1/2 c. boiling water
  • 1 tsp. baking powder
  • 1 tsp. vanilla or lemon extract
  • pinch of salt

Directions

    Beat eggs and sugar together until light.

    Stir in flour, salt and baking powder; mix well.

    Add boiling water, then extract. Pour into well oiled jelly roll pan and bake in a 400° oven for 15 minutes.

    Turn out on cloth wrung from hot water.

    Trim edges and spread with jelly.

    Roll immediately.

    Sprinkle with powdered sugar.
