  • 24 lb. ground venison
  • 3/4 c. salt
  • 3 Tbsp. ground calamon
  • 3 Tbsp. marjoram
  • 2 Tbsp. Tender Quick
  • 2 Tbsp. + 1 tsp. Accent
  • 1/2 c. black pepper
  • 2 Tbsp. liquid smoke
  • 1 tsp. garlic powder
  • 2 Tbsp. water

Directions

    Mix first 7 ingredients together and freeze.

    Then slice while still partly frozen into thin strips.

    Lay on racks; brush with remaining ingredients.

    Bake or dehydrate on low heat until done, 4 to 6 hours.
