- 2 to 3 lb. beef brisket or venison steak
- 1/3 c. soy sauce
- 1/3 c. liquid smoke
- 1/2 tsp. garlic salt or use juice of 1 clove garlic, mashed, plus 1/8 tsp. salt
- 1/8 tsp. pepper
Directions

1Freeze meat until firm, but not solid, to make slicing easier. Use a meat slicer or sharp knife to slice meat with the grain as thinly as possible.

2Place strips into a shallow pan and marinate 2 to 3 hours in mixture of remaining ingredients.

3Drain.

4Place strips on racks over foil or cookie sheets in a 150° oven and let bake 8 to 12 hours.

5The long time ensures a dryer product that will keep longer.

6Let cool and store in plastic container in refrigerator.

7Will keep without refrigeration at least 2 weeks.
