- 4 c. all-purpose flour
- 3 c. sugar
- 1 tsp. salt
- 1 Tbsp. plus 1 tsp. baking powder
- 1 Tbsp. plus 1 tsp. nutmeg
- 3 c. heavy cream
- 6 large eggs
- 1/4 c. dark rum or brandy
Directions

1Heat oven to 350°.

2Grease and flour four 7 1/4-inch pans (there's no need to bake all batter at once).

3Mix flour, sugar, baking powder and nutmeg in large bowl.

4Add cream, eggs and rum; beat with electric mixer on low speed for 1 minute, or until well blended.

5Increase speed to medium; beat 3 minutes longer, until thick.

6Pour into prepared pans.

7Bake for 45 to 50 minutes, or until a pick inserted in center comes out clean.

8Cool in pans on wire rack for 10 minutes.

9Remove from pans; let cool completely.
