Ingredients
- 2 (4 oz.) cans green chiles, diced
- 1 lb. Monterey Jack cheese, grated
- 1 lb. sharp Cheddar cheese, grated
- 4 eggs
- 2/3 c. evaporated milk
- 1 Tbsp. flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 12 to 15 cherry tomatoes, halved
Directions

1Combine chiles and all cheeses in bowl.

2Put in well buttered shallow 2-quart casserole.

3Beat 4 egg whites until stiff.

4Beat 4 egg yolks, evaporated milk, flour, salt and pepper together. Gently fold in whites.

5Pour over cheese mixture using fork to ooze it through cheese.

6Bake 30 minutes at 325°.

7Remove from oven and add tomatoes around edge.

8Return to oven baking 30 minutes longer or until inserted knife comes out clean.
