John Wayne Casserole

Ingredients

  • 2 (4 oz.) cans green chiles, diced
  • 1 lb. Monterey Jack cheese, grated
  • 1 lb. sharp Cheddar cheese, grated
  • 4 eggs
  • 2/3 c. evaporated milk
  • 1 Tbsp. flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 12 to 15 cherry tomatoes, halved

    Combine chiles and all cheeses in bowl.

    Put in well buttered shallow 2-quart casserole.

    Beat 4 egg whites until stiff.

    Beat 4 egg yolks, evaporated milk, flour, salt and pepper together. Gently fold in whites.

    Pour over cheese mixture using fork to ooze it through cheese.

    Bake 30 minutes at 325°.

    Remove from oven and add tomatoes around edge.

    Return to oven baking 30 minutes longer or until inserted knife comes out clean.
