- 6 medium yellow squash, sliced
- 1 medium onion, diced
- 1 c. diced Ro-Tel tomatoes
- 2 c. bread crumbs
- 2 c. water
- 1/2 tsp. black pepper
- 1/2 tsp. salt
- 1 Tbsp. margarine
- 6 slices Velveeta cheese
Directions

1Cook in medium size saucepan on medium heat the squash, onion, salt, pepper, butter and water until vegetables are tender; drain. Add Ro-Tel and bread crumbs.

2Pour mixture into a quart casserole dish.

3Top with Velveeta slices.

4Bake in a 350° oven for 20 minutes, or until hot and bubbly.

5Serve at once.
