Kahlúa-Glazed Bananas

  • 4 small, firm ripe bananas (about 1 1/4 pounds), peeled
  • 1 cup water
  • 1 tablespoon instant coffee granules
  • 1/3 cup firmly packed brown sugar
  • 3 tablespoons reduced-calorie stick margarine
  • 1/4 cup Kahlua or other coffee-flavored liqueur
  • 1 1/3 cups vanilla nonfat frozen yogurt

    Cut each banana in half crosswise, and cut each piece in half lengthwise. Set banana pieces aside.

    Bring water to a boil in a large nonstick skillet. Add the coffee granules, brown sugar, and margarine; reduce heat to medium, and cook until sugar dissolves, stirring frequently. Add banana pieces; cook 5 minutes, turning occasionally. Remove from heat, and stir in Kahlua. Spoon over frozen yogurt.
