Kangaroo Pancakes

Ingredients

  • cooked beef or steak, shredded
  • 1 c. sour cream
  • 1/4 to 1/2 bottle Worcestershire sauce
  • 1 medium onion, sliced very fine
  • 1 c. mushrooms, sliced thin and cooked
  • pancake mix
  • 2 eggs
  • milk

Directions

    Mix meat, onion and sauted mushrooms together with sour cream and Worcestershire sauce.

    Make pancake batter.

    Follow directions on the box, but use enough milk to make it thin enough for crepes. The batter should look like thin cream.

    Use about 1/4 cup for each pancake.

    Fry in medium skillet.

    Turn each cooked pancake out onto plate and fill with about 2 to 3 tablespoons of meat mixture.

    Roll up crepe style and serve garnished with lettuce.
