- 250g soft butter
- 3/4 cup caster sugar
- 2 cups plain flour
- 1/4 cup cornflour
- 1/4 cup rice flour
- 1/4 cup almond meal
- 2 tsp vanilla essence
Directions

1Preheat oven to 160oc. Line a 28x18cm tin with baking paper.

2Beat butter and sugar until light & fluffy, add vanilla.

3sift flours and add to the butter mixture with the almond meal. Press together to form a soft dough.Turn onto a lightly floured surface and knead to smooth.

4Press into prepared tray and score into fingers & pierce with a folk, sprinkle with extra sugar & bake until golden brown (35-40mins)

5You can also make into little cookies & then dip into chocolate.
