Ingredients

  • 250g soft butter
  • 3/4 cup caster sugar
  • 2 cups plain flour
  • 1/4 cup cornflour
  • 1/4 cup rice flour
  • 1/4 cup almond meal
  • 2 tsp vanilla essence

Directions

    Preheat oven to 160oc. Line a 28x18cm tin with baking paper.

    Beat butter and sugar until light & fluffy, add vanilla.
  3. 3
    sift flours and add to the butter mixture with the almond meal. Press together to form a soft dough.Turn onto a lightly floured surface and knead to smooth.

    Press into prepared tray and score into fingers & pierce with a folk, sprinkle with extra sugar & bake until golden brown (35-40mins)

    You can also make into little cookies & then dip into chocolate.
