  • 1 (4 oz.) can mushrooms
  • 1/4 c. celery, thinly sliced
  • 1/4 c. onion, diced
  • 1 Tbsp. butter
  • 1/2 c. sour cream
  • 6 eggs
  • 3 Tbsp. milk
  • 1/2 c. ham, diced
  • 2 cheese slices

Directions

    Combine mushrooms, onion and celery.

    Saute in butter until celery is tender-crisp.

    Add sour cream and set aside.

    Beat eggs and milk and pour half into skillet.

    Add 1/4 cup ham and spread with half of filling.

    When eggs are firmly set, fold in half and top with cheese slice.

    Repeat with remaining ingredients.

    Makes 2 large omelettes.
