- 2 1/2 c. sifted self-rising flour
- 2 c. sugar
- 1 1/2 c. vegetable oil
- 4 egg yolks
- 1 c. crushed pineapple with juice
- 2 Tbsp. hot water
- 2 tsp. cinnamon or 1 tsp. nutmeg and 1 tsp. cinnamon
- 1 c. chopped pecans
- 4 egg whites, beaten stiffly
Directions

1Combine all ingredients in order, except nuts and egg whites. Beat well.

2Add nuts and fold in beaten egg whites.

3Pour into an ungreased tube pan.

4Bake in a 350° oven for 1 hour or until cake tests done.

5Let cool in pan.

6Turn onto platter.
