- 1 gal. ripe tomatoes, quartered
- 2 Tbsp. pickling salt
- 2 c. white vinegar
- 3 c. white sugar
- 2 Tbsp. pickling spices
- 1 Tbsp. cinnamon stick pieces or 1 tsp. ground cinnamon
- 1/2 tsp. cayenne pepper
- 1 tsp. ground dry mustard
- 1/2 to 1 onion, chopped
- 1/2 to 1 green pepper, chopped
- 4 heaping Tbsp. cornstarch
- 1/4 c. vinegar
Directions

1Boil all ingredients except cornstarch and 1/4 cup vinegar for one hour.

2Put through a food mill.

3Return liquid to a boil Add cornstarch and 1/4 cup vinegar and whisk into juice.

4Bring to a boil and boil for 10 minutes.

5Put in sterile jars and seal.
