Ingredients

  • 1 gal. ripe tomatoes, quartered
  • 2 Tbsp. pickling salt
  • 2 c. white vinegar
  • 3 c. white sugar
  • 2 Tbsp. pickling spices
  • 1 Tbsp. cinnamon stick pieces or 1 tsp. ground cinnamon
  • 1/2 tsp. cayenne pepper
  • 1 tsp. ground dry mustard
  • 1/2 to 1 onion, chopped
  • 1/2 to 1 green pepper, chopped
  • 4 heaping Tbsp. cornstarch
  • 1/4 c. vinegar

Directions

    Boil all ingredients except cornstarch and 1/4 cup vinegar for one hour.

    Put through a food mill.

    Return liquid to a boil Add cornstarch and 1/4 cup vinegar and whisk into juice.

    Bring to a boil and boil for 10 minutes.

    Put in sterile jars and seal.
