Ingredients

  • 2 tablespoons gelatin, unflavored two envelopes
  • 1/4 cup water cold
  • 1 cup water boiling
  • 1 cup lime juice fresh
  • 1 tablespoon lime zest grated
  • 1/2 cup sugar
  • 3 cups yogurt cheese, nonfat

Directions

    Dissolve gelatin in cold water.

    Add boiling water and stir until dissolved.

    Add lime juice, rind and sugar.

    Stir well.

    Mix in yogurt cheese until smooth (food processor works well).

    Pour into a deep 9 inch pie pan, or pour into small individual-serving-size containers.
