  • 2 slices 40 calorie bread (crumbs made in blender)
  • 4 pkg. Hi-Energy Vanilla Supplement
  • green food coloring
  • 1 c. water
  • 2 pkg. Equal
  • 1 c. low-fat cottage cheese
  • 1 1/2 tsp. lemon extract or to taste
  • 1 Tbsp. lime juice or to taste

Directions

    Place crumbs on flat microwavable plate and microwave approximately 2 minutes.

    Set crumbs aside to cool.

    Blend all other ingredients in blender until smooth.

    Taste to see if lime or lemon extract is fine to taste.

    In a parfait glass, alternate bread crumbs and pudding.
