- 2 lbs cod fish fillets
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 celery ribs, sliced
- 1 medium green bell pepper, chopped
- 14 cup black olives, pitted and sliced
- 1 (12 ounce) jar salsa
- 1 tablespoon lemon juice
- 14 cup fresh cilantro, chopped (go with about 1 tbsp. if using dried)
Directions

1In a large frying pan, heat the olive oil over medium-high heat.

2Add the onion, celery, and pepper, and cook until softened (about five minutes).

3Add the olives, salsa, and lemon juice, and simmer for five minutes or so.

4Place the fish fillets in the sauce.

5Spoon some of the sauce over the fish and reduce the heat to medium.

6Cover and cook for about five minutes, until the fish is cooked through.

7Sprinkle the cilantro on top and serve.
