  • 1 can diced Ro-Tel tomatoes
  • 1 can cream of chicken or mushroom soup
  • 3/4 c. chicken broth
  • 3 lb. chicken pieces
  • 12 to 14 corn tortillas
  • 1 chopped onion
  • 1 to 2 c. grated Velveeta cheese

    Boil chicken; debone and dice.

    Heat Ro-Tel, onion soup and broth together.

    Layer corn tortillas on bottom of casserole dish with no holes.

    Put 1/2 chicken and 1/2 broth mixture over tortillas; layer with cheese.

    Repeat layers, topping with cheese. Bake for 30 minutes at 350°, or until hot and bubbly all the way through.
