Ingredients
- 2 cups rice either the red variety or the regular white rice
- 3 cups water 720 ml.
- 2 cups coconut milk Thick, extracted from 1/2 a grated coconu
- salt to taste
Directions

1WASH the rice well.

2In a pan, put the rice, water and salt.

3Bring it to a boil.

4Lower the heat.

5Cover and cook till the rice is soft and the water is absorbed.

6Stir in the coconut milk.

7Simmer till the coconut milk is absorbed and the rice is very soft and creamy.

8Cool slightly and turn out into a flat dish.

9Level the sides and top with a knife.

10When cold, cut kiribath into diamond shapes.

11Can be served as the main course with the accompaniments suggested above.
