- 3 c. fresh lemon peels (12 lemons)
- 1 c. whole cloves
- 1/2 c. whole allspice
- 3 c. fresh orange peel (8 oranges)
- 12 cinnamon sticks, halved
Directions

1Cut peels into thin strips and spread on baking sheet.

2Dry in oven set on lowest temperature until peel is dry and brittle, approximately 3 1/2 hours.

3Combine dried peel with spices and store in airtight jar.

4Add a large spoonful of mixture to a pan of water.

5Simmer over low heat.
