- 8 oz. kiwi fruit
- 1 c. heavy cream
- 4 egg whites
- 8 oz. sugar
- 1/2 oz. gelatin, melted in 5 Tbsp. water
- 1 (8-inch) sponge cake
- 1 c. strong tea
- whole kiwi fruit (for garnish)
Directions

1Briefly puree 8 ounces kiwi and pour into bowl.

2Whip cream into soft peaks.

3Whisk egg whites until stiff; sprinkle with sugar toward end and beat to incorporate sugar.

4Stir melted gelatin into puree.

5Fold in whipped cream, then egg whites.

6Pour half the mousse into a round 8 x 3-inch mold.

7Refrigerate 15 minutes.

8Pour tea over cake and let absorb.

9Put cake in mold in 1 piece.

10Add remaining mousse.

11Freeze 4 hours.

12Garnish mousse with kiwi.
