- 8 ounces kiwi fruit
- 1 cup heavy cream
- 4 egg whites
- 8 ounces gelatin melted in 5 tbsp. water
- 1 sponge cake 8 inch
- 1 cup tea strong
Directions

1Briefly puree 8 ounces kiwi fruit and pour into bowl.

2Whip cream into soft peaks.

3Whisk egg whites until stiff.

4Sprinkle egg whites with sugar towards end and continue whisking to incorporate sugar.

5Stir melted gelatin into puree.

6Fold in whipped cream and then egg whites.

7Pour half of mouse into a round 8 x 3 inch mold.

8Refrigerate 15 minutes.

9Pour tea over cake and let stand until tea is absorbed.
