Ingredients

  • pulp from approximately 12 Koosa
  • 6 eggs
  • flour
  • salt and pepper to taste
  • oil or butter

Directions

    Lightly salt Koosa pulp and let water drain out (15 to 20 minutes).

    Squeeze out remaining liquid.

    Mix pulp and eggs together.

    Add flour until you have the consistency of thick pancake batter.

    Add salt and pepper to taste.

    Spoon mixture onto a hot buttered or oiled saute pan or griddle about the size of a small pancake.

    Lightly brown on both sides.

    Serve with fresh sliced tomatoes.
