  • 1 pound Bacon
  • 1 whole Onion, grated
  • 5 pounds Potatoes, Grated And Soaked In Water
  • 1/2 cups Flour
  • 1 cup Half-and-half
  • 6 whole Eggs, Beaten

Directions

    Preheat oven to 375 degrees. Grease a 9x13 baking dish.

    In a large skillet fry the bacon until crisp. Remove the cooked bacon to paper towels to drain and reserve the bacon grease.

    In a large bowl stir in the bacon grease, chopped bacon, grated onion, and grated potatoes. Mix in the flour, half and half and eggs. Season to taste with salt and pepper.

    Pour into baking dish and bake for about an hour, until it is set and golden brown at the edges. Cut into squares and serve with sour cream, if desired.
