Ingredients

  • 3 1/2 to 4 c. flour, divided
  • 1/2 c. sugar
  • 2 pkg. dry yeast
  • 1 tsp. salt
  • 1 c. milk
  • 3/4 c. raisins (golden)
  • 2/3 c. butter or margarine
  • 1/4 c. water
  • 4 eggs (room temperature)
  • 1 1/2 tsp. grated lemon peel
  • 2 to 3 Tbsp. bread crumbs or ground almonds

Directions

    In a large mixing bowl, mix well 2 cups flour, sugar, yeast and salt.

    Heat milk, raisins, butter and water to 120° to 130°. Butter need not melt.

    Add to flour mixture.

    Beat at medium speed 3 minutes or until smooth.

    Beat in eggs.

    Stir in lemon peel and 1 1/2 cups flour or enough to make a thick batter.

    Cover in warm place.

    Let rise 1 hour or until doubled.
