- 5 lb. potatoes
- 1 medium onion
- 5 slices bacon
- 5 eggs
- salt and pepper
Directions

1Peel and grate the potatoes on fine side of hand grater, grating a bit of onion between each potato.

2Add salt and pepper to taste.

3Cut strips of bacon and fry until crisp.

4Pour over potato mixture.

5Beat eggs and add to mixture.

6Pour into square or oblong pan about 2 to 2 1/2 inches deep.

7Bake at 425° for 20 minutes, lowering heat to 375° for another 40 minutes or until nicely browned.

8Serve hot with sour cream or applesauce.
