  • 1 cup dark molasses
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1/2 cup strong coffee
  • 3 cups flour
  • 2 tablespoons powdered ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon mace
  • 1 teaspoon nutmeg
  • 1 teaspoon cream of tartar
  • 3 eggs
  • 1 teaspoon baking soda
  • 1/2 cup orange juice
  • 1 grated orange, rind of
  • 1/2 cup finely chopped crystallized ginger
  • Frosting
  • 1 (8 ounce) package cream cheese
  • cream or sour cream
  • 2 teaspoons brown sugar
  • 1/2 cup strawberry jam

    Heat the molasses, butter, sugar, milk, and coffee until sugar is dissolved.

    Sift the flour, spices, and cream of tartar together.

    Beat the eggs until extremely thick.

    Fold the dry ingredients into the molasses mixture alternately with the eggs.

    Add the soda to the last addition of flour.

    Next add the orange juice and rind.

    Mix and pour into a 13x9x2-inch pan lined on the bottom with wax paper.

    Sprinkle with crystallized ginger and bake in a 350* oven for about 40 minutes.
