  • 1 1/2 lbs ground lamb
  • 1 medium brown onion, chopped finely
  • 1 clove garlic, crushed
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2/3 cup stale bread crumbs
  • 1 large egg, beaten lightly
  • None None Salt and freshly ground black pepper
  • 4 None pita pockets
  • 1 tbsp olive oil
  • 1 1/2 cups purchased tabbouleh
  • 1 None medium tomato, chopped finely
  • 1 cup hummus
  • 1 tsp extra virgin olive oil
  • 1/4 tsp ground paprika
  • 1 cup beet dip
  • None None Lemon wedges, to serve

Directions

    Combine lamb, onion, garlic, spices, breadcrumbs, egg, salt and pepper in a medium bowl; mix well.

    Shape the mixture into 12 ovals and thread onto skewers. Cook the skewers on a heated, oiled grill pan (or outdoor grill) until browned and cooked through.

    Brush pita bread with oil, cook on heated grill pan until browned.

    Combine tabbouleh and tomato with salt and pepper to taste in a bowl. Drizzle hummus with extra-virgin olive oil, sprinkle with paprika.

    Arrange kofta skewers, bread, tabbouleh, hummus, beet dip and lemon wedges, if desired, on a serving platter.
