Ingredients

  • 4 Tbsp. butter
  • 3 lb. boned lamb, cut into 1-inch cubes
  • 1/2 to 1 tsp. cinnamon
  • 1 large onion, sliced thin
  • 1/2 tsp. pepper
  • 1/4 to 1/2 tsp. garlic powder
  • 1 c. toasted almond slices
  • 2 c. uncooked rice (converted)
  • 1 c. white raisins
  • 2 tsp. salt
  • 1 can beef consomme or 2 bouillon cubes
  • 2 c. water (plus 10 oz., if using cubes)
  • 1/4 c. lemon juice

    In two batches, quickly brown half the lamb in 2 tablespoons of butter over high heat.

    Remove and set aside.

    Lower heat to medium and saute onions, cinnamon, pepper and garlic powder for 3 to 5 minutes until onions are opaque.
